How long do you age your mead?  Mine seems to taste like rocket fuel unless I age it for 2 or 3 years first.

This is my first mead. Gonna open the first bottle after about 10 months. Hopefully I keep this up (with other wines too) that it's a slloooooowwww process.

My dad makes wine.  Holy crap is it ever STRONG!  Its fun on Christmas when my nephews hit the bottles and get poo poo'd.  lol 

Just becareful if you make wine, I know someone who attempted to make it and it became champagne because they were too impatient to wait.

I drank my first wine after like 3 months.  but it was harsh. 

I still have most of it (over 2 years later) and it is much better now.
