When you use a handheld meter you're normally metering INCIDENT, either ambient or flash. You point the meter head at either the light source or the shooting position. (There are fine points and it varies a little in different situations).

Why on Earth would you meter off the subject? The meter would be fooled by black skin, very white skin, dark or light clothing, or a bunch of other factors.

haha. it all depends on if you are using an incident or reflective meter.   I think there's a third but, I never use it so...I don't care to go look this up.
