what is it?  I noticed my canon 300d has um (micro m I think) and my 20d has 6.3.  5D II has 6.4.

It refers to the size of the individual sensor sites on the sensor - the larger the pitch the larger the sites and hence the more photons they can receive, generally leading to lower noise and cleaner colours.

It's the distance between the centres of adjacent pixels. Your 300D example makes no sense without figures.
