I've chatted in person with one of the top Cat Photographers, Richard Katris (Chanan Photo).  CFA pays travel expenses, you make money on a few hours of cats photos a day for up to 3 days. It was $50.00 per set in 2000 (about 5 shots), + print price which was pretty high. Not a bad gig, low overhead, see the world. You won't get rich, but you can't spend that money when you're dead.

I apologize English is not my native language so many times I make serious mistakes with grammar but I hope so everyone can understand me what I want to say and what I want to share.
Like Phase Shift said average customer is your target.
Another 2 stories came on my mind and this can be very interesting also.
2 very young and very clever guys ( one is 17 years old, another is 18 years old) from my neighborhood bought used T3 rebel camera and they started their photography business.
I know both guys and their  parents ,great families, and one of them came to my office one day and he said to me we started to work , can you please help us with your studio , we have some customers and we need to shoot them in studio, can we use your studio until we buy equipment  and set our own studio. smile
I said them OK , sure, whenever you need come to studio and shoot for free.
The day after tomorrow they came with "their clients" haha ( I am laughing ) smile
Their clients were couple of teenagers ( they were looked very serious ), full professional relationship ( I felt like I am kid at that moment, how professional they were)  , I made them lighting , I connected camera with studio lights and I said them studio is yours , enjoy.
I left studio to take some coffee around , when I came back you know what I saw?
I saw amazing young guys which shot senior portrait styling and still life photography.
I started to watch what they do and I could not believe what is happening.
When they finished shooting their customers left, and I asked them to take some coffee with them .
First of all I have asked them why you don't shoot fashion ( because I was expecting to see fashion shooting , as we know all young people dream at their age to become famous models) .
And you know their answer?
They said to me exactly these words : We are not stupid everyone around shoot fashion and models , we are different we shot our style.
I have opened my mouth and I didn't know what to say, I have stayed without words.
Then they showed me their work , kids shoot real life photography mainly on location ( sometimes their customers want and studio shooting extra) with great files with emotions for their friends which want something different.
In post work they add some grain and other simple and nice  editorial effects with brushes  ( without any skin retouching) .
They charge 40 euros per shooting and they are fully booked every single day after their school lessons .
Facebook is powerful tool for that they have a lot of friends through Facebook and a lot of customers.
And I guarantee you these kids will be soon in very serious business.
Another story , also friend of mine ( he is fashion photographer with great skills ) and like everyone else these days not too much job  , he found idea to start to work with people which want to sell or rent their apartments  and houses.
He made connections with all agencies and websites in his area and he charge 30 Euro for shooting interiors 1 hour  (plus extra fee for gas) .
It is much easier to sell or rent property if you have nice professional files of your property.
Very cheap service , everyone can pay and want to pay for that .
One tripod, one camera with lens.
Later color correction in PS  plus couple of sliders with plug in Topaz Clean and Topaz interior details to make files pop and dramatic and that's it.
Every day couple of clients , he is more then satisfied , at the moment he earns 100-150 Euro per day ( more then he could ever imagine with fashion photography).
Also I want to add few more things from my previous post above about friend of mine who shots ladies with pets.
He found 5-6 km from centre one nice space with 150 square metres with parking , he pays 350 euros for that per month , he bought some nice sofa , tables and chairs ,TV, coffee machine with free coffee and tea for clients, always  some fresh magazines and newspapers there , and he charge 20 euros per hour ( or per visit) to ladies with their dogs.
He is fully booked all day , his rates are very low.
A lot of ladies come almost every day to take coffee to read some magazines , they leave their dogs to play around , my friend make couple of shots with their dogs and that's it..
At the end in many cases they don't even ask for files, they come because they don't know what to do at home.
He made great community there , I visited him two weeks ago and I found there couple of ladies with magazines and coffees , and they pay for visit and shooting.
Impressive.
And you think these great ladies know what is pixel level high end retouching with 50% opacity grey layer?
You think they ask for that work?
You think they ask you, sorry which lenses you use, do you have cheap kit lenses 18-55 or you shot me with expensive L series lenses ?
Of course no, because they don't know these things, they came to make coffee and  to get simple studio shots and to print later files with their dogs to have them as a memory.
A lot of simple examples we have , average customer is everywhere around you , you just need sometimes very simple idea to take money from average customer.
Don't expect to become rich and famous with that , but yes, you can make earning ( sometimes very, very  good income ) and you can make living with this income.
