This is a wonderful book. It isn't a cookbook. It is a "how to cook" book. For example, it doesn't give recipes for cream soups. It gives 1 recipe and then tells how to make the other ones by varying the ingredients. It ties things together like that. For someone in cooking school, it'll be pleasant, light reading.
