Has no one thought of this before? I just made a bacon and mushroom Jambayla. It was a collection of random ingredients left in the fridge. Cut the bacon up into 1" chunks before draining and sauteing the muchrooms. Added some Oscar Blues tenFidy hot sauce. **Heaven**

I'll take the bacon, you can keep your shrooms.

I'm allergic to shrooms.  All shrooms.  Not that I've ever liked them anyways. tongue

I make bacon & mushroom omelets every once in a while.  I usually include some shredded cheddar cheese, but sometimes get wild and use Swiss cheese. big_smile

Cooking mushrooms in bacon fat does sound rather interesting.

Some people even top it off with avocado! I know, it's hard to believe, but it's true. Really, it is!

Hehehehehe. My wife just made ratatouille. At a wedding it's called "Garden Medley" or some such, but, you know, all the veggies from the garden- NOW, before they spoil~~~~

Anyway, she's a great cook and I enjoyed her ratatouille but i said, darling, you know what this needs? Bacon and mushrooms! I am soooooo right and i saw her eyes lite up like- why didn't I think of that!
