For general theory and a lot of nice to know knowledge, Gry Garness's Hidden Colors
ebook is a good and easy read. She has another called True Colors but I haven't read it.

For more practical and in depth color theory as it pertains to Photoshop, I have yet to find a better book on the topic than Dan Margulis's Professional Photoshop 5th Edition. It's not an easy read and focuses on color correction but the knowledge is in depth enough that it can very easily be applied to other color topics like toning and grading. Highly recommended.

Ruben Vasquez beat me to it, other than I have the Photoshop 6 version.


Bob Randall recommended me this book years ago. It's not a new book, but nothing color related that we do (unless things have changed a lot in newer photoshop versions since the old one I use) is that new.

It is in CMYK, but most of what he talks about translates directly into RGB and photo prints.
