Okay, so here's the deal. As part of my capstone project, I have to survey a minimum of 50 people and see what they'd order off of my menu, then use those findings to cost my menu and do inventory projections. Basically, all I need to know is what you would order off of this menu. The concept is a Korean-Tex Mex food truck.

•    Kimchi Quesadilla:  blue corn tortilla filled with queso fresco and kimchi, toasted to perfection.
•    Soondae Taco: blood sausage taco topped with pickled daikon, tomato, and queso fresco.
•    Korean Tortilla Soup:  a traditional tortilla soup, with a twist! Chicken broth, garlic, onion, roasted tomatoes, cilantro, kimchi, baby bok choy, gochujang and sour cream topped with crispy tortilla strips.
•    Dubu Flautas: deep fried dubu [soft tofu] simmered in a tomato-sesame sauce, wrapped inside a corn tortilla, topped with a delicious mole sauce.
•    Bulgogi Burrito: grilled bulgogi, sautéed peppers and onions, cilantro, tomatoes, bean sprouts, and cheese wrapped inside a warm flour tortilla, topped with our special “뜨거워요 tteugowoyo” sauce.
•    Fish Cake Cevice: fish cakes served inside an avocado, topped with fried garlic and a drizzle of ssamjang.
•    Prawn Nachos: margarita marinated prawn nachos topped with bean sprouts, jalapenos, picked daikon radishes, and a 3 cheese blend.
•    Bulgogi Dynamite Kimbap: kimbap roll stuffed with fresh daikon, ground bulgogi, carrots, and japaneno, deep fried to perfection in peanut oil, topped with toasted sesame seeds and red pepper flakes.
•    Ddeobokki Rellanos: roasted poblano peppers stuffed with ddeobokki, tempura battered, fried and topped with our special “뜨거워요 tteugowoyo” sauce.
•    Plantain Chips: deep fried plantain chips, topped with fried garlic, served with a side of ssamjang sauce.

Drinks
•    Traditional thai iced tea
•    Avocado smoothie [chocolate and cilantro optional]
•    Banana milk
•    Taro cream tea
•    Jarritos sodas
•    Topo Chico
•    Red Bean smoothie
•    Green tea smoothie

Over time, I would probably try just about everything on the food menu. Then I would choose my favorite and mostly just eat that. I'm boring that way.

For sure on the drinks I would never get the Jalisco sodas.

Not much help I realize.

When is this truck coming to Bellingham?

There is logic behind my choice then. Being from Fresno California and having eaten a TON of Mexican food at people's homes, in restaurants, at street fairs and from food trucks I have found that any place that makes a good relleno will usually have good everything else. Reason being that the less good places tend to use the same grill at the same temperature that they cook the meat on. Rellenos need a lower temp so the egg batter doesn't "skin" into overcooked protein.

    Ddeobokki Rellanos: roasted poblano peppers stuffed with ddeobokki, tempura battered, fried and topped with our special “뜨거워요 tteugowoyo” sauce.

This, because it seems to be the only vegan thing on the menu (and actually sounds good too... unless the mole sauce is made with a meat broth of some kind, in that case, no go).

I usually drink water but a green tea smoothie sounds good.

There is a place up here - Taco Lobo - they make an unusual chile relleno. It is round and served floating on top of a bowl of homemade tomato soup. As you eat the relleno the melted cheese runs into the soup and makes everything magnificent.

I have not eaten much Korean. We have one place up here, the time I went to try them they had moved across town so still planning to make a trip.

The mole sauce can definitely be done with veg stock. I hadn't considered that. That would actually be cool since Austin has a ton of vegetarians and vegans.

I'll take:

Honestly, they all sound pretty horrible. A Kimchi Quesadilla?!? Talk about fusion!

That said, a lot of things don't sound very appetizing but are, in fact, really great. I'd probably try all of them just out of curiosity. I like food and I like trying new things.

I'm not into the whole idea of fusion so I wouldn't order any of it.

I ate Kimchi with some beef and veggie dumplings.  That satisfied my short term Korean urge.
