Yikes! Sounds like you need to have a talk with him. Some people don't like Valentine's Day even as a couple, but it's a good idea to at least make an effort to see what's up.
Honestly, I'd take a walk in the park with ice cream. It doesn't have to be a fancy dinner or a page out of those gender-stereotyping jewelry ads. (As we know, every middle-class guy has to buy his gal $5000 worth of jewelry every V-Day apparently.)
