Now this might seem over the top, but overall 4 looks were needed, each with their own distinct lighting setup. Overall it took us 2 hours to get it right and only 30 mins to shoot smile

OK, I will bite:

Where the heck was the sun?  At 8:00am there should have been some sun.  Was it still low enough that the ISO 50 and 1/400 of a second was able to turn daylight to night?

can anyone show some details of snoots?

How about overhead lighting?

Finally, if you want a pure white background, but without halo/bleed, how much more light on the backdrop than on model?  1/2 stop more?

Thanks! I'm really happy with the results of this shoot. We were in a bit of a canyon, as well as forest, so not much direct sun (more so later in the morning). I don't remember the meter readings but at ISO 50 and 1/400, the ambient light was something like f1.4-f2.8. So, exposing to f8-11 made it look like night.

On some later shots, I dragged the shutter to bring in some ambient light and open up the background (plus it was later in the morning and brighter). I believe I had to go to about 1/15 to 1/60 depending on how bright I wanted the background. If you go to my profile, there are a bunch more shots up, some of which include dragging the shutter.

I'm usually 1-2 stops over for white backgrounds depending on whether I want pure whites or subtle tones. The closer the model to the background, the harder it is to control any stray light. I just recommend experimenting with different setups and exposures until you get a feel for different results on high key shots.

Looks like a beauty dish and reflector for the first one just a large octabank or SB for the 2nd.  Pretty standard stuff.
