I think it has more to do with the entire exposure, rather than just apeture or shutter speeds alone.

If you are shooting film different ones have slightly different curves of light to which they respond. If you notice these differences then you can change out your film according to the look you would like. Hence the different variants of film..

Use and add filters, more possibilities all according to the light you are using.

Probably the best photographers today are not still photographers but "cinematographers" It's important for them to make a film look consistent all the way through. Hence they are keenly aware of nuances light,filtration, exposure and the post process as well.



I imagine this is true of different digital cameras as well, an expensive proposition.
