You could also just use a steep curve and a Hue/Sat layer at -100 Saturation (in Saturation blend mode) - this can be modified so that you get maximum contrast in each of the shadows, mids, and highlights.

Once the texture is done, I think the color needs some work as well.  Example...her body is much darker than her face...I would fix that.
