I know it's strange, but one reason I never considered going to culinary school is because I know you have to make all kind of gross stuff - like mayonnaise. Just looking at mayonnaise grosses me out. Seeing people spread it slowly on bread will sometimes make me heave, if I look at it too long. If I were you, whipping that mayonnaise, I would have just barfed everywhere, all over the place.

I like mayo in VERY small doses, and only every so often (once a year). I used to eat it all the time, then I saw someone make it from scratch and read an ingredients list on a jar once. Never again. I loathe Hollandaise. LOATHE it. I've never had a batch I could stand to eat, it's always too... something. There isn't quite a word for it, I don't think.

Mastering the five mother sauces and their derivatives is basic. I learned that stuff in my first semester. I suggest you try to suppress your distaste, or even better; open yourself up to new taste experiences if you want to succeed in your endeavors. Good Luck. Which school are you attending? And that there's this assumption that everyone in America loves mayonnaise is even insidious. It shows up in the most unsuspecting places. Ahh!

really, it should take about 10 minutes doing it by hand. when I do something like that, I actually prefer to place the whisk between my palms and then roll them back and forth. I find it much easier, though you might look like a chump doing that in class.
