I know it's strange, but one reason I never considered going to culinary school is because I know you have to make all kind of gross stuff - like mayonnaise. Just looking at mayonnaise grosses me out. Seeing people spread it slowly on bread will sometimes make me heave, if I look at it too long.

If I were you, whipping that mayonnaise, I would have just barfed everywhere, all over the place.

It's good to know someone else hates mayonnaise as much as I hate mayonnaise.

I like mayo in VERY small doses, and only every so often (once a year). I used to eat it all the time, then I saw someone make it from scratch and read an ingredients list on a jar once. Never again.

I loathe Hollandaise. LOATHE it. I've never had a batch I could stand to eat, it's always too... something. There isn't quite a word for it, I don't think.

Aioli is sort of like mayonnaise, but with garlic and lemon juice.

And I love ALL of those.

I love garlic. I mean, I'd marry it if I could. But the mayo part of that just... kills it for me.

Exactly what are you trying to get out of culinary school?  Mastering the five mother sauces and their derivatives is basic.  I learned that stuff in my first semester.  I suggest you try to suppress your distaste, or even better; open yourself up to new taste experiences if you want to succeed in your endeavors.

Good Luck.  Which school are you attending?  I attended JCCC Culinary Arts program at Overland Park, Ks.

I don't know. I like butter, so that can't be it. I couldn't tell you exactly what it is about it that I don't like. I've only had it two or three times, so maybe it's just that I've never had GOOD Hollandaise. But every time I've had it, I have really strongly disliked it.

Packaged Hollandaise made from a powder mix is generally pretty nasty.  Knorr brand is tolerable.  Classic Hollandaise made from scratch is Nirvana. (not the band) big_smile

Maybe that's it. I've never had it made from scratch. Just the boxed stuff.

I couldn't agree more.  And that there's this assumption that everyone in America loves mayonnaise is even insidious.

It shows up in the most unsuspecting places.  Ahh!

Then you need to get a new major. They are major, traditional sauces.

You're in Texas, heck, I can hardly believe you made it past barbeque!

Wait, maybe that's the problem, you don't use mayonnaise on BBQ so you're not used to it!

really, it should take about 10 minutes doing it by hand.   when I do something like that, I actually prefer to place the whisk between my palms and then roll them back and forth.  I find it much easier, though you might look like a chump doing that in class.
