A looking dive bar wants bartender portraits. I would my regular style that I do with models in ACR but would like to do a bit of a 'hard' look like these portraits - https://www.flickr.com/photos/digitalgrace/

Any directions on setting to use for this or is there any kind of a preset?

As long as you keep subject contrast within limits, you can increase the contrast in editing without the shadow areas becoming too obvious.

Nice but I know the person did it all in Photoshop.
