I've always wondered about this. Why do people quote themselves? Why don't they just write it? Isn't it the job of someone else to quote you?

Like if I thought that modeling is an extension of the soul.

Wouldn't I just say--

Modeling is an extension of the soul.

And the someone could quote me...

What is the point of writing, "Modeling is an extension of the soul." -Me

It just seems redundant.

they want to feel special in that they believe that may have spoken the words first. Same as copywriting things.

To avoid being called on repeating myself, when I say something that is relevant in a discussion, but I know I expressed the thought well somewhere else, I will say "as I said in [another thread]... quote..."

Maybe it's pretentious, but that's how I use my own quotes.

I agree.  If you're saying it, don't add quotes, and certainly don't add "me" at the end. 
Doing so implies the writer is so impressed with their thoughts, they feel others may wish to know who came up with such insightful words.  Adding quotes is unnecessary.  Adding me is unnecessary.  Just say it.

For the same reason that people write their profile in the 3rd person.  They think that the nice things they're saying about themselves will sound more important if it seems that someone else is saying them.
